    Just made the kids a roast chicken and mozzarella toasted sandwich. Kids seems to like it.

    Here's the one thing I cooked in the recent past, 10 minute risotto.
    Equipment needed: Pressure cooker, frypan. I used an electric pressure cooker and regular stove top fry pan

    Chicken, sundried tomato and spinach risotto (could substitute the sundried tomatoes with mushrooms if you like, and spinach with thawed peas, whatever, all my recipes are anything goes.)

    Ingredients:
    500g chicken breast, diced
    bunch of spinach or half a frozen box spinach
    100g sundried tomatoes, chopped (not the oily ones from a jar, their flavour is too strong, get vacuum packed ones)
    2 cups of arborio Rice
    4 cups chicken or vegetable stock
    1 onion, chopped
    2 cloves garlic
    1/3 cup white wine
    30g butter
    1/3 cup grated parmesan
    4T Olive Oil
    salt, pepper

    Directions:
    Oil pan, brown chicken, set aside
    Add butter to pan, saute onions until done, then add garlic and cook for 2 min.
    add rice and fry until rice slightly toasted
    deglaze with wine and reduce until nearly all evaporated
    Transfer to pressure cooker, add stock, cook on high pressure for 7min
    just before pressure cooker done, start to reheat fry pan, add chicken back, add tomatoes to cook a bit for a few minutes and spinach to wilt.
    Release pressure for pressure cooker, add rice mixture to pan and stir in rice until liquid fully finishes being absorbed, the chicken is cooked and the rice tender.

    Stir in some parmesan cheese and season with salt and pepper to taste

    e; I added a few sliced black olives just before the end too.

    Last nights oxtail casserole type thing turned into oxtail soup for lunch

    Actually didn't mean to connect it to that. Just figured me and richo were in the same thread so it was obviously time for porno dwarfs. Plus they go well with cooking.

    Always like to keep it simple on Sundays...

    Lunch was oily sardines on Turkish bread with olive oil, salt pepper, coriander and lemon washed down with an avocado.

    Dinner is going to be a wood barby with spuds and chestnuts in the coals and grilled mushies and some blue porterhouse on top.

    Lasagne .................Aldi special.................gave up cooking professionally about 6 years ago.....after a career of over 20 in commercial kitchens....................don't cook anymore unless it's something the wife doesn't know

    We've completely ruined our planned dinner by making a big bowl of air popped popcorn with New Zealand butter and Himalayan pink rock salt. Washed it down with a couple of litres of fake coke. Dinner is planned as char grilled scotch fillet steak with pepper sauce, smashed roasted rosemary garlic chat potatoes, and vegies. It's the potato thing that's got me really curious. You par boil them in the skins, then bake them with a sprinkle of olive oil in a very hot oven for 10 minutes, then smash them in the tray with a fork, add some finely chopped rosemary and garlic and sale and a splash or 2 of olive oil then back in the oven for 10 minutes or so on a high heat. Apparently they come out super crispy and very very tasty. I was thinking of adding some finely chopped bacon bits as well, because everything is always yummier with bacon. Might be a late dinner though.. I'm still full of popcorn and cola!
